Cooking with new aims in eating

 

A vegetarian cookbook, and I'm skipping the first part about families... just looking for easy recipe ideas.


I sometimes watch Christopher Kimball on TV making delicious sounding things, so I wanted to check out some of these recipes too. And these two books are literally checked out from the library!

Did I mention I seldom use recipes?

My very favorite...I must eat it 3 times a week in the season!
Two and a half minutes in the microwave...

Which gets a good temp going (especially if it hasn't been refrigerated, so sometimes I go to 3 minutes) and then let it set for at least 3 more minutes wrapped in the wax paper to continue cooking!
I only cook one at a time, and that seemed to work even when fixing it for guests as well.



These are the basics for most of my salads. Sometimes nuts, cran-raisins, veggie cheese or other fun things are added if I have them.


I love these sprouts, but seldom eat all of them before they start to go bad. That used to happen a lot more to my produce...I'm getting better at eating it up by setting it as highest priority to eat each day.



I like lots of fun tastes on my salads...I also have some bottled dressings.

    I have never tried cooking corn on the cob in the microwave. I am try to eat healthy, more salads and veggies. The cook books do give you some new recipes to try. Take care, have a great day!

    1. Hi Eileen...I actually decided against most of these recipes, though Kimball did teach me how to sear fish in a skillet. I tried it, and had to continue cooking in a toaster oven. Perhaps I just was impatient. Have a great week!

  4. We only have corn on the cob in the summer here. We used to grow it when we lived in the Sierra foothills. So yummy. Your food choices look good and healthy.

    1. Oh, I've only had fresh picked corn a few times...so sweet compared to that in the stores!

  5. My boyfriend cooks corn on the cob in the microwave. Ingenious! I love eating it, but hate picking it out of my teeth afterward. :)

    1. Hope you enjoy it. I've read about some people who cook it in it's leaves...but I've not liked trying to get the silk off when it's already hot.

  8. I think I tried corn that way once. I prefer the steaming in a large pan because we usually are making more than one ear.

  9. You are on an excellent path! Sweet corn is so good these days, I can eat it raw. And Kimball's recipes are great!

    1. I enjoyed reading his recipes, but honestly don't think I'll use the ones in the Forks over Knives cookbook, just too many ingredients for each dish.
